Also known as scampi or Norway lobster, the langoustine resembles a small lobster. It has a sweet, delicate flavor more like a lobster or crab. However its texture resembles shrimp more than lobster. 

Cooking tip:

To minimize the risk of overcooking the delicate flesh, it’s best to thaw the frozen langoustine before cooking.

What is CAS frozen? In short its freezing method, which prevents  the water molecules clustering up. As a result the texture of the product does not change.
