In 1730 the Domecq family arrived in Spain. A name intimately related to the production of high-quality food and wines, such as sherry and brandy. A knowledge that has been passed from parents to children. This has always been accompanied by a second passion, the breeding of free-range animals, like our 100% Iberian pigs.
In 1970 Juan Pedro Domecq Solís began the breeding of the 100% Iberian pig on his estate in Lo Álvaro, Seville. In an ambitious search to create the most exquisite ham, Juan Pedro relied on different studies carried out in collaboration with several Spanish universities. The result is found in a unique variety: the 100% Iberian Lampiño-Marmellado pig.
Breed Lampiño Mamellado
A unique almost extinct breed selected by the founder as the best for the manufacture of acorn-fed Iberian ham due to its ability to convert the acorn and infiltrate the fat.
A breed that is characterized by pigs of small stature, hairless (hairless), dark in color, thin leg, and that have mamellas (fleshy appendage on the front of the neck)
The pigs are born on our farm located within the Cortijo “Lo Alvaro”, our family home, under the care of Vicente and Claro , our pigs. This allows us to guarantee our production commitment: only 100% Iberian acorn-fed products (100% Iberian mother and father).
Our production is limited to 3,000 pigs per year , a limit that allows us to maintain total control of it at all times.
